In Italy the Aceto Balsamico is a tradition and the Italians know how to appreciate and use a good and also old Aceto Balsamico.
Under no circumstances should old Aceto be added to salads and even less should it be dipped in olive oil. For dips the italians use the Balsamic creme, which is a rather low quality vinegar.
An old Aceto develops its taste best on a piece of grilled flreich. No matter on lamb or beef.
A piece cut with knife and fork and a drop! on top, nothing more. The taste is incomparable. You can also use it with a piece of matured Teleggio.
